"So so good! Honestly this soup turned out even better than the versions I've had at restaurants. I was able to find galangal (Thai ginger) so I added about 1.5 inches of the root sliced up with the other ingredients right at the beginning. My only regret is not making more! This recipe produces about 2 entree servings. It was tasty over brown rice with green beans. I'm definitely planning on making it again!"
