"Very tasty. I made half the recipe, which was Plenty for just Rob and I. I seasoned both sides of the eggplant with salt and pepper after brushing with oil, and before putting on the grill. I only used a small squeeze of honey in the dressing, and maybe a 3 count pour with the olive oil. Also, after mixing everything together, I seasoned the whole salad with salt, pepper, and a little lemon juice."

Even though we worked quickly, the dough became soft immediately in a summer kitchen and my empanadas looked pretty ugly! The dough tasted yummy when finished, but was VERY rich for the empanadas.
