"I followed the recipe pretty much "as is," except added a bit of red pepper flakes for additional spice. We grilled fresh pineapple rings along with the chicken, as shown in the photo. I only had a 6 oz can of orange-pineapple juice, so used that with additional juice from the fresh pineapple. We served it all on a bed of rice, drizzled with the glaze. Very tasty and easy to make."
"I made this a bit differently because we wanted shrimp tacos instead of salad. I used raw jumbo Argentina shrimp and sauteed them with a little butter and olive oil after seasoning with salt/pepper and McCormick Perfect Pinch Cajun. I did not chop up the shrimp - because we like our tacos that way. I marinated the onions as directed, then used a slotted spoon to remove them from the dressing. I tossed everything together and added some of the dressing for flavor, but not so much as to make the filling runny. These were great on flour tortillas, topped with a little cheese and sour cream. My husband and I both agreed the result was a keeper."
"As the recipe author says, this is an alternative take on taco night. It was tasty enough, but in the end I wondered if we should have just had tacos! It was kind of hard to get a bit of shredded lettuce in with the forkful of taco pie. We enjoyed it though -- it's worth a try. I think next time I will add some enchilada sauce or adobo sauce to the layers. Update: Some recipes I find are better on Day 2. Pulling this out of the fridge and warming it, we found that the flavors had melded together, and it was very tasty."
