Pie-sized cookies, layered with brandied real whipped cream and berries, gorgeously croawned with more fresh red berries.
Set oven at 350 degrees.
In large mixer bowl, combine flour, sugar, salt, vanilla, butter and egg. Blend well at low speed. Divide dough in half and spread over bottom of 2 ungreased 9" round layer pans. Spread Almond Topping over each. Bake at 350 for 25 to 30 minutes until light golden brown. Cool 5 minutes; carefully remove from pans. Cool completely.
Place one layer on serving plate, topping side up. Slice half of the strawberries and fold into half of the Whiped Cram Filling; spread over bottom layer. Top with second layer, topping side up. Spoon remaining Whipped Cream Filling over top. Arrange remaining whole strawberries on whipped cream. Chill several hours before serving.
Almond Topping:
In small mixer bowl, beat egg at high speed until foamy. Gradually beat in sugar, continuing to beat uyntil thickened. Blend in almond paste and almond extract at low speed.
Whipping Cream Topping:
Beat cream and confectioners~quote sugar until thickened. Fold in brandy flavoring.
