Crumb Mixture:
1 1/4 cups flour
1 1/4 cups quick oats
1/2 cup sugar (i prefer brown sugar) 
3/4 cup butter, melted
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons vanilla extract
Filling:
1 jar apricot jam
1/2 cup coconut
  1. Preheat oven to 350*F.  Grease a 13 x 9 pan.
  2. For crumb mixture, in large mixing bowl combine all crumb mixture ingredients. Beat at low speed, until crumbly, 1 to 2 minutes. Set aside 1 cup crumb mixture; press remaining crumb mixture into pan.
  3. For filling, spread apricot preserves to within 1/2-inch from edge of crumb mixture; sprinkle with reserved crumb mixture and coconut.
  4. Bake 20 to 27 minutes or until lightly browned. Cool completely. Cut into bars.  Makes about 2 1/2 to 3 dozen.
