Holiday Dinners for the Immediate Familyhttp://www.bigoven.com/groups.aspxIn the past, I've been drawn to holiday cookies, desserts and of course recipes for the Christmas Dinner for the crowd of people who come over.  This year, however, Iwant to focus on recipes with 4-6 servings for the weeknight family meals so we can celebrate during the entire season.  I'm looking for entrees, sides and desserts that can be prepared and cooked within an hour or two that definitely take the "hum-bug" out of routine suppers.  Thanks!  ~lauriepooh

Re: Christmas Menushttp://www.bigoven.com/groups.aspxMy family is small.  Each year we rotate between my home and my sister's home.  We've always gotten together on Christmas Eve but now that our children are grown and one has a family of their own one of mine works in retail, we have had to moderate our plans because of our Mom who has mild dementia and is in an assisted living facility.  Mom is more cognizant earlier in the day. 
 
This year we will get together Christmas Day around 2 pm.  We'll be having:
 
Sister is preparing:
Ham
Mashed Potatoes
Sweet Potato Casserole
Rolls
Sweet Tea
 
I'm preparing,
 
Turkey
Stuffing
 A Creamed Corn Casserole
Green Beans or  Broccoli
 
I've already made a Coconut Cake and a Black Walnut Pound Cake. I will make Pecan Pie and an Apple Pie. I will take homemade Fudge and Chocolate Balls to share. I have Gingersnaps in the oven now baking but those are for gifts.
 
My daughter is making an Avalanche Cake and an appetizer.
 
My niece who has two children under age 2 is making a Pumpkin Crisp.
 
We will eat our meal together.  Open gifts then rest for a bit before having our coffee and dessert. We take so much food, because we all share and send home food with each other.  I always have to make an extra pan of  stuffing/dressing for my daughter who loves it to take back  home to share with her roommates.

Turkey with Stuffing and Gravy
Baked Ham
Venison Smoked Garlic Sausage
Homemade Buns
Mashed Potatoes, Turnip Casserole,  and Baked Onions
Tomato Aspic (my brother threatens not to attend if it's not served)
Cranberries
Holobchi
Perogie
Coleslaw
(whatever salads or casseroles everyone else brings)
A dish called wheat : it;s a Ukranian mixture of bulgar and dill and Pork)

Host or Hostess "has" to do dessert:
(we made that rule so no one but the hostess gets fat, the leftovers are given to the younger generation that haven't started cooking yet)


Christmas Pudding
Mincemeat Tarts
Pumpkin Pie
Shortbread
Pampushka
Nanimo Bar
Homemade chocolates

Note:  we sleep for 3 days after we've consumed this!  LOL

We used to always have turkey, too, on Christmas but we change it up these days.  This year we'll be picking my BIL and SIL up at the airport on Christmas day so I'm doing some make ahead dishes and a non-roast entree.  Here's the menu:
 
Cioppino
Garlic Bubble Ring
Mediterranean Pasta Bake in Individual Gratin Dishes
Green Salad with Cranberry Vinaigrette
Creme Brulee

My must-have Christmas Coconut Cakehttp://www.bigoven.com/groups.aspx

 Coconut Cake
 
 1 box white cake mix
 1/4 c. vegetable oil
 3 eggs
 8 oz. sour cream
**1 can cream of coconut (8 1/2 oz.)
Mix all ingredients with electric mixer 2 mins.Bake in greased 9x13"pan
 or 3 9 "round pans at 350 degrees for 30 minutes. Cool then frost.
 Frosting:
 8 oz. cream cheese
 1 lb powdered sugar
 2 tbsp. milk
 1 tsp. vanilla
 7 oz coconut
 Blend powdered sugar into softened cream cheese.
 Add milk and vanilla. Spread between cake layers,sides and top.
Sprinkle coconut over the top. Do not need to refrigerate.

 **cream of coconut is usually found in the liquor department.
