It's supposed to have relatively low glycemic impact. This is the first time I'm making this kind of pesto and using a Dreamfield product. If it all turns out well, I'll be sure to post the recipe and a photo on this site.

I love his Anaheim Shrimp Scampi (shrimp sauteed in a bold and flavorful scampi butter, tossed with avocado, asiago cheese, and spaghetti squash). Tequila chicken is another good one (chicken breast coated with fresh cilantro and spices, baked, and then finished with a generous helping of shredded cheeses).  Mock Fettuccine Carbonara made with spaghetti squash is out of this world.

Stella has many other recipes that I love and make regularly. I hope to begin posting my versions along with photos soon. I also like Dana Carpender's recipes. From my own kitchen, I enjoy my eggplant and zucchini lasagna, pecan crusted catfish or chicken.

If anything I've mentioned gets your attention, let me know and I'll provide more information.

somersizehttp://www.bigoven.com/groups.aspxSomersizing isn't really a low carb diet, it's a great way to lose weight with food combining. The basic concept is you do not mix your proteins and carbs together. You also cut out anything "white". No white flour, sugar, breads, potatos etc...in Suzanne's book Eat Great Lose Weight it is explained in detail and tells you why it works. Everytime I want to lose weight I eat this way and the pounds come off. You can have good carbs. Whole wheat pasta, brown rice,cereal/with out all the sugar,etc..but you can't have it with proteins/fats.And vice versa, if you want a steak, you may have it with a salad or vegetable. No potato.There are a lot of good recipes in her book as well. My husband and I have lost a lot of weight eating this way

Re: Low Carb Eating What's Your Plan?http://www.bigoven.com/groups.aspxWhen I make salads I make enough for 2 or 3 and store the rest in a plastic bag. I always make sure I have eggs on hand. I usually buy 2 dozen and boil half of them. Egg salad wrapped in Romaine Lettuce leaves is a quick and easy snack and also makes a great light meal. You can do the same thing with leftover meat. Mashed potatoes is one of my weaknesses but Mock Mashed Potatoes using cauliflower, Parmesan cheese and butter tastes almost the same!

Re: Low Carb Eating What's Your Plan?http://www.bigoven.com/groups.aspxMy hint is to always have a cooked chop or a sausage in the fridge. I find snacks difficult otherwise. I love cheese in amounts that is not helpful and tend to use it in main meal recipes or for desert so dont use it for snacks.
