Re: Peach or Apple Cobbler with dumplinghttp://www.bigoven.com/groups.aspxOk.. well, I tried to post it and there's an issue with the server I guess.  Here's the recipe just incase:

Peach Cobbler

Main Ingredient: Peaches
Cuisine: American

1/2 cup butter
1 cup sugar
1 cup flour
2 teaspoons baking powder

1 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon cloves
1/4 teaspoon nutmeg

Instructions:

Preheat oven to 350º

Melt 1/2 cup butter in large baking dish (9x13 glass). Mix thoroughly: 1c sugar, flour, baking powder, salt and milk.

Pour mixture into melted butter. DO NOT STIR.

Pour fruit on top of mixture. Use enough fruit to cover one layer of dish. DO NOT STIR.

Sprinkle with the mixture of: 1c sugar, 1/2 tsp cinnamon, 1/8 tsp cloves and 1/4 tsp nutmeg.

Bake at 350º for 45 mins. Serve warm.. on top of vanilla ice cream is great!!

Re: Peach or Apple Cobbler with dumplinghttp://www.bigoven.com/groups.aspxI just posted one.. The dumplings are formed when the batter that the fruit is laying on rises and surrounds the fruit.. looks like dumplings.  The more batter that is added.. the fruit will sink in and you'll have more of a full dumpling on top.. or crust.   Unless you're looking for a sugary/cinnamon crust on top of the dumplings.. that's what mine comes out like :)  You can use any fruit.. doesn't have to be peaches.

Baking powder usage at low altitude.http://www.bigoven.com/groups.aspxHi.  I am living at a low altitude and my cakes are all flopping.  Am I using too much or too little baking powder and how do I work out how much should be used.

Re: pumpkin barshttp://www.bigoven.com/groups.aspx I think you mean can you use canned pumpkin pie filling. Sure I've done it but if you use seasoned pumpkin make sure you don't use all the spices the recipe calls for. Canned pie filling never has enough so add alittle more to it.
