Re: Preserveshttp://www.bigoven.com/groups.aspxI would recommend that you contact your nearest Cooperative Extension office for the safest canning recommendations for your location and altitude.  It is vitally important for your safety to use up to date directions.  The acidity added to each jar, the size of the jar, and the processing times are all critical.  A beautiful-looking jar of home-canned tomatoes can easily harbor deadly botulism if proper canning directions are not followed carefully.  Grandma's recipe can be a killer as our soils and tomato strains have changed over time.  Using an out-dated canning book can also be inaccurate, so if you choose to purchase a canning book, make sure that it is updated and reliable - such as the Ball Canning Book, this years publication.  Avoid older cookbooks/guides.  Happy canning!

Naples? An ISLAND? I must have missed this massive geological upheaval! Not the last time I visited (June this year), Naples is situated at the North end of the Bay of Naples on the Italian mainland.

Steve, have I misinterpreted your meaning?

Also, driving in Italy, I've been doing it annualy for the last 15 years and never had a problem. Sure, it looks chaotic but since everyone knows that everyone ignores the rules, then everyone is very alert. In 15 years I've only ever seen one accident!

(Sorry the first post was for Naples, Florida!)

I've been to Naples i.e., Napoli in 1986, and loved it.  Beautiful island, but be sure to stay away from all the cruiseboats when they arrive!  If you're up for it, renting a scooter/moped is a fun (but dangerous be careful!) way to see the island.

Napleshttp://www.bigoven.com/groups.aspxcooking commentsRe: Napleshttp://www.bigoven.com/groups.aspxHi Cindoc,

If your daughter is stationed at Naples, I'm sure she can give you tons of guidance as to where to visit.

The problem is that you're spoiled for choice! Naples itself, I can't comment on, I've only ever driven around it or landed at its airport. The city itself has a bad reputation and tourists are always warned to be careful there - there's a lot of gangsterism.

But outside Naples there's a wealth of discovery to be done. Vesuvius, if you fancy visiting a live volcano (I never did!). Pompei, an utterly amazing preservation of an entire Roman city. Herculaneum, another preserved city overwhelmed by Vesuvius but only partly excavated. Amalfi, on the coast south of Naples and a journey along the Amalfi coast road will never be forgotten! From Amalfi you can catch a ferry to Capri (although I think it's a little over-rated myself) but the journey there is gorgeous calling in at places like Positano and visit from Amalfi up to Ravello with some of the most amazing views from this mountain village e.g. Sorrento is not too far away either and quite a famous tourist trap.

I could go on and on really but, you and your daughter get a map out once you arrive there. You won't have any problem filling your days!
