Try adding mushrooms..  Grilled portobello mushrooms are very satisfying, and ordinary white button mushrooms make a great addition to soups and sauces.  http://www.umamiinfo.com/umami-rich_food/ has a list of umami-rich vegetables.  Miso has some of that flavor, but is really salty.  Some nutritional yeasts and yeast extracts have it, too.

Training/Developing Taste Budshttp://www.bigoven.com/groups.aspxI am fairly new to vegan eating and it is proving a difficult task. I can find plenty to eat, but I feel completely deprived if I can't make everything I eat taste wonderful.
 
Afte a lifetime of cooking with meat, the tastes of some foods are disappointing to my "meat-trained" tastebuds. While I am discovering subtleties of taste I never dreamed possible, I'm still working on making a vegetable soup I like without meat broth or bouillion.

On the one hand, I would not want to be invited to someone's home and be offered a dish that was labelled as "vegan", only to learn it contained butter or chicken broth. On the other, it's a bit extreme to re-write a recipe when all it needs in a notation about which ingredients to substitute in order for it to be vegan.

Maybe this is obvious, but how would you handle this?
* Email the original poster, requesting the addition of a comment re: substitution to make vegan (or the removal of the vegan tag)?
* Adding a comment to the recipe?

Adding Recipes tagged "Vegan" to this grouphttp://www.bigoven.com/groups.aspxAlthough I'm not a vegan, I have great respect for those of you who choose this culinary and broader lifestyle, and so I opened up this particular cooking group.  I've added a bunch of recipes tagged "vegan" to this group. 
 
Please note:   Recipes that are tagged vegan don't necessarily mean they are truly vegan.  What it means is that someone, somewhere out there on the Internet, has added the tag "vegan" to the recipe.  Your definition may vary based on the strictness of your interpretation of veganism.  So, please go easy on us; we're just trying to help. 
 
Another note We also have several good videos now posted to the site for vegan cooking. 
 
Please help everyone out by tagging recipes and videos properly, and editing them if you find an error...   Thanks, and happy cooking!
