Subject: WI UPDATE

Tomorrow makes one month since I restarted my journey to a healthier weight.  Progress has been slow, and some days, up and down, but I am thrilled to stay that in this month, I have lost a total of 6.5 pounds!!   No, not an earthshattering amount, but better off than on.  I will happily take a pound and a quarter a week.  Even a pound a week will be fine with me, as I head down the road to my goal and beyond.

And you know what?  I really don't think I could have done even this much without having this site to come to.  It reinvigorates me daily, so to those who have taken an active role in this, I thank you from the bottom of my heart.

WOW that's great! You can do this. Onward and downward you go. I didn't think i'd last a week on WW but then as the lbs started to drop. I used every last point available to me so I wouldn't feel deprived. I also have to thank Canadian authors Janet & Greta Podleski who gave me Eat, Shrink & Be Merry! cookbook. That book and their first 2 cookbook (Looneyspoons and Crazy Plates) helped me relearn to cook not only healthy but tasty meals. I learned more about nutrition from those 3 cookbooks than I have the rest of my life. Most books are nutrition are long winded and boring but they made it fun to learn by breaking it up into short and interesting nutritional facts on every page.

Diane, thank you so much.  I have to tell you that part of what inspires me are YOUR accomplishments, and I'm going to be screaming with joy, the day you post and tell us you've hit that 100 pound mark, and I know it won't be long now either!! 

I used to have that Crazy Plates cookbook.  Just the names of the recipes were good for a laugh.  I'm a cookbook collector (a-holic might be a better word for it), and I read cookbooks like some people read novels.

Let me tell you i'll be jumping with joy when I hit 100lbs and it's sooooo much easier to jump with that much weight gone!! LOL
 
Their books are a good read even if you don't cook. The jokes are a littly corny. The recipe names are quite amusing. I love their show on the Food Network. Sticky Chicky has been a staple. I did sub the chicken thighs for breast. I don't think it's listed on the link though.

Wow Diane... thanks for that link.  I'm going to check out some of the listings and get some new ideas.  I prefer thighs too, and in fact, have some in the freezer.

No........don't see Sticky Chicky there, but it sure sounds interesting.  I virtually live on chicken.

Oh well....... off to the kitchen I go.  Bought a bunch of veggies I've been too lazy to cook, so I need to blanch them and get them in the freezer for later use.  It's too expensive to be throwing food away, especially these days.

I do mine with breast and reduce the cooking time to 30 minutes.
 
Sticky Chicky

16 boneless, skinless chicken thighs (about 3 lbs/1.4kg)

1/2 cup barbecue sauce (hickory flavored is nice!)
1/4 cup reduced-sodium soy sauce
1/4 cup red wine vinegar
1/4 cup honey or maple syrup
1 tablespoon chili powder
1 teaspoon ground cumin
1 tablespoon Dijon mustard
1 tablespoon grated ginger root
2 teaspoons minced garlic

1 tablespoon cornstarch

Preheat oven to 400ºF. Spray a 9 x 13-inch baking pan with cooking spray. Arrange chicken thighs in pan in a single layer.

Whisk together all sauce ingredients in a medium bowl. Pour evenly over chicken. Turn pieces to coat both sides with sauce. Bake, uncovered, for about 40 minutes, or until chicken is no longer pink in the center.

Remove chicken from pan and keep warm. Carefully pour sauce from pan into a small pot. Bring to boil over medium-high heat. Combine cornstarch with an equal amount of water and mix until smooth. Add to sauce. Cook until sauce is bubbly and thickened, about 1 minute. Serve hot chicken with extra sauce on top.

Makes 8 servings:

287 calories, 7.1 g total fat, 1.7 g saturated fat, 32 g protein, 19 g carbohydrate, 0.5 g fiber, 141 mg cholesterol, 590 mg sodium

For sure, it's a lot easier when you're younger, but I am bound and determined that this time it's not only going to come off, no matter how long it takes, but it's also going to stay off.

Hey y'all,

Hit a milestone today, and I'm grinning from ear to ear.  Got on the scale, and found that I've lost ten pounds since restarting on September 18.  Still got a very long road to travel, but I'm on my way!!

How're the rest of you doing?  What can we do to help?

10lbs is fantastic! I lost another lb today! Only 10.8lbs to goal now. If only the last 10lbs was as easy as the first.

Weigh to go on that pound.  You're so close, and I can't wait until you hit that 100 pound mark.  No matter how long it takes though, you should be soooooo proud of yourself for what you've already accomplished.  It's just plain AWESOME!!!

It truly is amazing with all that weight off my joints. Although I still have arthritis the pain isn't as bad. I have a lap! It was hidden under my big belly LOL.
