Subject: What's In Your Freezer?

Mine's really empty right now, but I'd love to get some ideas for foods and menus that freeze well and could be prepared ahead and just reheated.

I find that being retired is keeping me busier than when I had a real job, so it would be great after a busy day to just pop my dinner in the nuke or oven.

Individual servings of Chili are sometimes in our freezer, and we especially like the Turkey Chili saved above.

We are lucky to be living near a terrific store called Dogwood's here in California.  They sell wonderful fruits and veggies for great prices, so I am always buying and freezing them!  It will be great to pull out my sliced artichokes in February and grill them up on my little kitchen grill!

I freeze almost everything! Since it is just my husband and I at home cooking and grocery shopping for two can be very difficult. I have a recipe on my page for Sofrito which is a Spanish cooking base. After I make it I freeze in into ice cube trays so that it's easy to portion when I need it to cook. I also freeze all my Veggies! I purchased a Reynolds Handi-Vac (Food Bag reusable Vacuum Sealer) and it's amazing! So i have begun to freeze everything I can. I love it! It stops everything in the feezer from getting freezer burn and since the bags are reuseable the possibilities are endless. I have to portion everything for two so it saves me so much on meat, veggies, and Waffles.

I make king ranch chicken and lasagna and freeze for meals later.  I also make these for my two sons who are college students living in apartments.  It gives them a quick and easy meal that is not fast food.  I also make large amounts of meatballs which I bake in the oven and then freeze.  These can be added to a jar of marinara sauce for a very quick spaghetti and meatball dinner.  I always send a large bag back to school with the boys which they also use for meatball subs.
 
I also make them chili and a couple kinds of homemade soups for their freezers as well.  The other big freezer hit for them is homemade cookie dough - normally chocolate chip.  I freeze one batch into 4 logs wrapped in saran wrap and then put in a freezer bag.  They can take one log out a time, slice and bake and have warm cookies for dessert.

Would you be willing to share your soup recipes?

I freeze practically everything.  I make extra batches of chili, split pea soup, tortilla soups, white chili's, pasta sauces etc.  The only soups I've found that doesn't freeze well are those with pasta.  It turns the pasta mushy.  I freeze tortillas, and breads of all kinds.  When I make too much quick bread (like a banana or pumpkin) I will freeze it whole, or in slices.  I use a vacuum sealer for most non-liquid jobs.  I also almost always have a lasagna in there.  I use 2 - 9x9 pans instead of the standard lasagna pan.  The one I put into the freezer is a disposable one so I don't have to lose a pan for several months.
