I have a six year old who wants to cook so I am seeing what we could do together.

Way Cool!!  Spending time in the kitchen with kids is great for all involved.
Our (4-Y-O) granddaughter always enjoys it when Grandpa comes to visit because she gets to help make something special for breakfast.

Biscuits are a good starting recipe.  They are easier and less messy than pancakes.
In the first attempt, substitute oil for shortening to cut out the "cutting in" part, and just divide the dough into 12 balls and flatten them on the cookie sheet by hand.  Refine the process later.
 
Even better, use a shortcake recipe and make strawberry shortcake.
 
He will learn a lot, so the first few attempts will go very slowly
* How to follow written instructions
* What those funny marks on the measuring cups and spoons mean
* How to measure
* How to mix.
* How to divide into quarters, and how to divide those quarters into thirds
* How to use a timer
* How to accept compliments from his family
 
* How to clean flour up off the floor
* How to put things back in the pantry!
