Subject: thoughts on silicone ???

Hey you fellow gadget-freaks ... any thoughts to share on silicone pans?  I have two loaf pans that I use all the time, both are teflon coated.  the one with the darker insides makes the bread too crusty, so was thinking of replacing them with silicone.  Also I bake muffins quite a bit and was thinking of getting some of those.
 
haven't cooked with silicone ever.  love gadgets, but also am a pretty traditional kind of cook.  I try them and ditch them if they aren't really awesome.

Ann,

Coincidentally, I called my daughter about just this subject a few days ago.  She's a certified Wilton cake decorating teacher, and I figured she'd know if they were worth buying.  She told me she doesn't care for them, although I'm not sure she's ever tried them.  She does have several friends who use them and like them a lot.

Okay, this reply sure isn't much help, is it?  Maybe we'll both get some information.

   I use silicone in baking muffins and like how they always pop out of the pans nicely with even browning on all the muffins.  I have used a silicone cooking sheet for cookies and they come out perfectly browned.  Sorry, I have not used the loaf pans for bread.  But I know the round cake pans work great and the layers come out easily.  The only drawback I have found with silicone is that when filled with dough or batters they are so flimsy to carry to the oven.  If you can find the muffin pans with the metal rack that holds the silicone muffin pan insert it is worth the extra.  Another silicone item that I really love is the silicone scraper.  I like using it when making scrambled eggs and being able to use it in pans while cooking sauces.  The silicone basting brush is an excellant idea and more sanitary than the original basting brushes.

I have a couple of Round Cake pans. I think they are great and work very well.
The only thing I would suggest is to make sure you put it on a baking sheet for a solid surface and easier to pull out of the oven.
