(A SIMPLE RECIPE TO START OUT WITH)
 
STUFFED PEPPERS/PEPPERS WITH ANCHOVY:
 
These peppers would be found on any Italian antipasto platter.

ROAST LONG PEPPERS
PEEL THE SKINS
MAKE A SLIT ON THE SIDE
STUFF ANCHOVY INSIDE PEPPERS
FILL ANYSIZE STERILIZED JAR
COVER WITH OLIVE OIL AND VINEGAR
PLACE LID TIGHTLY ON CAP
 
(SINCE I NOW LIVE IN FLORIDA, I KEEP THIS KIND OF CANNING
IN MY REFRIGERATOR.  JAR WILL LAST A LONG TIME IN THE REFRIGERATOR.  SERVE WITH  CRUSTY ITALIAN BREAD.
IF YOU WANT ROAST SOME GARLIC AND STUFF INSIDE TOO.
 

My husband's family made these.  Can't find anyone who has a recipe.  Any idea how much vinegar?  The rest is pretty easy!
