Subject: how to prevent from hardening ciabatta bread

because everytime i bought the bread from store,after 1 day it becomes hard i don't know how to keep the bread soft.

It's awfully hard to keep fresh bread really fresh (it's why many French and most Europeans go to the market daily).  But some things that can help are:

  • Store it in a rolled up paper bag (I don't know precisely why, but I've found that keeping it from light does tend to help).  I've found that leaving it in a plastic bag can lead to mold fairly quickly.
  • You can freeze what you don't need
  • Some folks keep bread in the fridge; remove what you need and let it come to room temperature before using it
  • Consider buying a breadbox -- they really do work.

When I buy french bread or ciabatta, I cut it in half and wrap it tighly with saran wrap and into the freezer it goes, the freezer will keep it in the same condition as when you first bough it, make sure no air gets in to prevent freezer burn.

Don't microwave it, that will harden it.
