I have several recipes that call for a topping (e.g. caramel crunch candy) to be placed on the side & top of the iced cake. How do you get the topping to adhere to the sides of the cake? So far, I have been just throwing bits of crunch at the iced cake and that works, sort of...but that'sliterallya hit & miss method! Ideas?
Before frosting cake, place 4 strips of waxed or parchment paper around edge of the cake plate or stand to keep plate clean. Assemble and completely frost your cake on top of the waxed or parchment paper. Before the frosting has set, use your cupped hand to press the finely chopped nuts, shaved chocolate, shredded coconut, or in this case broken and chopped caramel crunch candy into the sides of the cake up to, but not over, the top edge. Some of the caramel crunch candy won't stick. If there are any bare spots, try again to press the caramel crunch candy into the sides. Turn the cake periodically to give yourself a comfortable working area. Remove waxed or parchment paper pieces by easing them gently to the left and then the right. Slide each one out the side; don't pull them out. Remove each piece by sliding in the same direction. If you're using and have placed your cake is on a cardboard round (very cheap and highly recommended), lift the cake from the cake plate or stand and hold it by the cardboard round beneath. Using one hand to hold the cake above the bowl containing the caramel crunch candy, use the other to press the caramel crunch candy into the icing, letting the excess fall back into the bowl.
