When I printed off this recipe # 58267, for Cherry Cake, 1st. Prize Winner, I noticed that the amount of Baking Powder is 2 TABLESPOONS! And the amount of flour in the recipe is 2 cups ... But 1/2 cup of that flour is used up to coat the cherries & slivered almonds. So, that leaves only 1 and 1/2 cups of flour with 2 tablespoons of baking powder, which seems to be incorrect. Please let me know why the amount of baking powder is so high. Thank you.

Hi puggy! I'm not sure what has happened but I'm not able to open the your discussion thread for "Cherry Cake, 1st. Prize Winner, recipe # 58267" and respond to your question there.

This recipe is not one of mine and I have never tried it. It is one of the recipes that was loaded into BigOven from Geminis MASSIVE MealMaster collection at www.synapse.com/~gemini. Since the recipe is not mine, I can not say for sure that the 2 tablespoons of baking powder is correct. However, I do a good bit of baking and may be able to somewhat answer your question. The amount of flour in this recipe is 2 cups and even thought 1/2 cup of that flour is used to coat the cherries and slivered almonds, its still in the final batter once all the ingredients are combined and mixed. So the 2 tablespoons of baking powder is actually being combined with the full 2 cups of flour not with 1 1/2 cups of flour as you suggest. If you used the full 2 cups of flour in the batter then used additional flour to dust any fruits or nuts, you would be increasing the total amount of flour in the recipe...usually not a good idea. This is why you use some of the flour called for in the recipe to dust any fruits and nuts.

If your concerned that the baking powder is not being combined or mixed properly, you can use the method that I use in most of my batter recipes. I sift together all the dry ingredients (in this case the 2 cups flour, 2 tablespoons baking powder and 1 teaspoon salt) and then dust any fruits or nuts (in this case cherries and slivered almonds) with some of the dry mixture.
