I'm looking for a Moist and Creamy & Cheese Mac & Cheese recipe. Most every recipe ends up being dry. Some call for eggs which I think would tighten it up too much? Tried the sour cream / cottage cheese recipes, but still always too dry. Many of them come out too bland in flavor ?

Try a stovetop version rather than baked. I always bake mine and use a lot of cheddar, it always tends to get grainy. That is the fate of a dry cheese being baked. At least, try reducing oven time. We are only warming an already cooked dish anyway. The crispy crust can be foregone. Barrilla has recipes for both methods to point you in the right direction. also try creamier cheeses, even the old standard "processed cheese food" AKA Velveeta!. Ingredients and methods can push this dish all over the map. Even the kind of dish can influence the outcome.
When I make Mac & Cheese I make it like my mom. lol I make a white sauce with butter, flour, and milk. I then melt sharp chedder cheese in the sauce. You then pour it over the macaroni, serve like this or I like to put a layer of crushed townhouse crackers and melted butter on top and bake for 15 to 20 min. or until just a little crisp. This makes a very creamy moist version.
You CAN bake the mac and cheese. The eggs keeps it solid but the milk makes it moist. The more milk you add the more moist it will be.
try this...
1bx generic brand mac and cheese mix.
boil noodlesw/salt (that way it not bland)... drain
add cheese mix from box ... then add favorite type of cheese
add egg.... add half cup of milk ( remember the more milk the more moist)
bake at 350 for about 8-10 min
for a bronzed top which i personally love boil at 500 for about 5min.
