I live in Phoenix. I'm currently a truck driver, but I've worked about 7 years in food service, mostly on the hot line. I love to cook, and bake. I'm having a lot of fun experimenting with making everything from scratch (bread, tortillas, etc.)

Carole’s English Muffin Bread

Carole’s English Muffin Bread

So my bread didn't end up with the nooks and crannies that the pictures on the website I got the recipe from had, but it still looks and tastes amazing!

I will be making more of this!

Note: the volume is slightly more than needed for a single pan. See my pictures.

Corn dog muffins

Corn dog muffins

Using the substitute recipe, the muffins don't get as dark as traditional corn bread recipes, but the flavor is definitely there! These would be even better with some chopped jalapenos, or maybe some chipotle dipping sauce, some kind of kick. Can't wait to make these for my daughters!

Banana Bread

Banana Bread

Awesome basic banana bread recipe! I kept finding recipes that were too complex, with nuts, sour milk, etc. This was a great recipe with no unconventional requirements. I added chocolate chips, and the bread turned out amazing!

Jambalaya with Shrimp and Andouille Sausage

Jambalaya with Shrimp and Andouille Sausage

Made this tonight, but browned up a little chicken first, then added that when I added the sausage. Also used green peppers instead of red, because that's what I had.

Turned out amazing!

I added some cayenne pepper, and since I didn't have garlic salt, I just used a bit more garlic, and added salt, and I put in a 1/4 tsp of parsley flakes.

It tastes amazing, and I can't wait til tomorrow, when the flavors have had a long time to meld.

Gonna post a picture shortly.

Homemade Pancakes

Homemade Pancakes

Great recipe! I used fresh squeezed orange juice rather than lemon juice, and I made waffles with it, with the added brown sugar. Great flavor, and well received by my guest!

Homemade Corn Tortillas

Homemade Corn Tortillas

The recipe was SUPER easy to make! I don't have a tortilla press, so after experimenting with rolling them out (which failed) I cut three sides of a quart storage bag, and pressed them out with a square baking pan. Worked beautifully! Definitely gonna be making these again, and again!
