Lentil Soup with Sausage and GreensWow! Probably the best soup I've made so far (in my amateur experimentation). I recommend red kale and Johnsonville Mild Italian Sausage. The kale stays slightly crunchy and pairs perfectly with the slight sweetness of the sausage. I also used tomatoes that had been stewed in basil and oregano. Fabulous! I wish I had doubled the batch.

Black Bean SoupI used a full 30oz bag of beans and doubled the rest, and the beans were clearly too much. It turned into more of a paste/bean dip. Still good though! I've been spreading it on tortillas with cheese and rice or meat and fresh avocado for a month now, and I still enjoy it.

Buffalo Chicken SoupI actually liked this better the next day after the flavors had a chance to marinate in the fridge. If I made it again, I might try to find a substitute for the Velveeta. Pairs well with Easy Breakfast Potatoes--give it a shot!

Roasted Butternut Squash - Heart FriendlyExcellent recipe! I substituted approximately 10 stalks of white asparagus for one of the onions and roasted everything along with a pork loin marinated in this recipe: http://www.bigoven.com/158934-Herbed-Marinated-Pork-Chops-recipe.html Forgot to add the cranberries and walnuts, but it'll just be a great excuse to make this dish again. VERY popular at my dinner party!

Peanut Thai PastaThis was FABULOUS! So simple to make, and absolutely delicious. I added the optional chicken, which was a delight. My friends all loved it!

Honey Dijon Roasted BeetsWhile I wasn't a huge fan, I must admit that I'm a meddling college student and have never tried to cook beets before. I suspect that I did not roast them for quite long enough, and perhaps I did not buy a very good variety of beet. I'm also not entirely sold on the mint. I look forward to returning to this recipe for a second go at it after learning how to select and prepare beets in general.

Honey Mustard Pork ChopsThis dish was delicious. Fast and simple, I doubled it and used French's Honey Dijon Mustard. (I also fudged the marinade and made a little extra). :) My 1/2 inch, boneless pork loin chops turned out very tender and flavorful!

Pasta a la Fresh!I like to use whole wheat pasta. If you prepare this dish and the quantity of veggies is a little low for your liking, it's very simple to add more fresh spinach and tomatoes. In the future, I plan on trying this recipe with artichokes, eggplant, and a vinaigrette dressing. Please let me know how YOU made it! [I posted this recipe.]

Cilantro RiceVery easy and quite tasty! Next time, though, I will probably only use 2 chicken bullion cubes to make the dish a little less salty.

Chicken ParmesanEasy and delicious! I enjoyed it with spaghetti and steamed broccoli on the side.
