Broccoli-Corn BakeMy family makes this for thanksgiving every year. Use ritz or onion toasted crackers instead of saltines.

Mini French Toast CupcakesMy previous review noted that the amount of batter needed in mini cupcake Pan was not stated. I since did some research: Mini cupcake cup size=1/8cup 1/8cup=2tablespoons. So I will next try 1tbsp and 1.74 tbsp batter in cups.

Mini French Toast CupcakesMade these today. Batter is a great fluffy consistency. Try nit to overfill the mini cups since the batter will overflow. The recipe isn't clear about quantity to fill cups. I've since read that mini cupcake cups should only br filled half way. Will try half next time.

Citrus Ricotta CookiesI changed a few things too. Made half the recipe. Added an extra 1/2c. Flour. Rolled dough into 1" balls and baked on greased cookie alerts for 10 min at 350F. Haven't decided yet on frosting/glaze. These cookies have gray texture. Yummy too.

Canadian Bacon, Spinch, and Mushroom Crustless QuicheI used whole milk & whole milk ricotta. The custard came out great. I also made this Crustless. Will use the custard again with other vegggies and meats. Great low carb dish.

Taco Bake (Bisquick)I changed the quantities & baked in 9" round deep pie dish. It tastes great. Here's what I cooked: 1.25lbs gr beef, 1/2c onion, 1 pack McCormick mild taco seasoning,1/2 can corn, 8oz tomato sauce, 1/2 can black beans. I also used z 1/2 of the bisquick mix but could have used the whole quantity kist as well.

Broccoli-Corn BakeBeen making this for years. Great casserole. Can substitute fresh steamed broccoli. Also can use other crackers such as toasteds onion crackers or ritz. Sometimes I add some whole corn.

Black Bean ChiliThe recipe didn't include can sizes for beans or tomatoes so I decided on quantity of beans and tomatoes "on the fly." I used 1 can approximate 14oz of each beans and one 25oz can of diced tomatoes. Good Chili had excellent flavor
