Chicken Enchiladas with a twistJust wanted to add a little tip that I used the last time I made this yummy dish. I make extra "sauce" and use the remaining as a base for a yummy tortilla soup---just add extra chicken and top it with small strips of tortilla chips, and add anything else you would like in it! It tastes just like a soup at our favorite restaurant!

Crispy Zucchini CoinsI needed something quick, and had most of the stuff on hand, except the parmesan. But I tried it anyways and they were bland but still real good dipped in ranch---my 4 year old gobbled them up. I'm sure they would be much better with the parmesan cheese, and I think next time I would add some garlic to the mix for extra flavor!
