California Zucchini BakeDelicious! A whole meal in one dish! I used a can of Rotel because I didn't have green chilies.

California Zucchini BakeDelicious and easy! This would be great for potluck or to make ahead too. I used a 3-qt casserole dish, a can of Rotel instead of green chiles, and next time I think o would add a chopped sweet bell pepper.

Chocolate Chip MuffinsNot quite as sweet as I would have liked, but nice and fluffy and a little crisp on the outside.

Tilapia in Garlic and Tomatoes SauceSooo good! Healthy and delicious!!

Balsalmic Bacon Asparagus with OnionsAbsolutely delicious!!! I think you could cut back on the bacon-maybe 1/2, but bacon makes everything better, so why not go for it? We had this with simple pan-seared filets and it was one of the best meals we've ever made. Thank you for sharing!!

Roasted CauliflowerDelicious! Roasting made the cauliflower nutty and sweet. We tried the fresh rosemary version this time.. I can't wait to try others!

Grilled Fish With Ginger, Lime And Cilantro SauceThis is our new favorite fish recipe. Even if you just bake the fish and leave off the ginger slices...the sauce is to die for!

|
Slow Cooker Pepper SteakEasy and yummy! I used a can of diced tomatoes, added another 1/4 cup of soy sauce at the end and served over rice. DH called it a home run! We'll definitely make this again.

Cuban Crushed PotatoesWow!!! So easy, so pretty and sooo delicious! Thank you for sharing this recipe. I'm so excited to have found it right before the holidays...I can't wait to make it for company. We added fresh basil and fresh oregano to the olive oil mixture. It was fantastic!

Turkey BurgersHubby doesn't usually like turkey burgers, but he loved these!

|
Angel Hair Pasta with ChickenLight and delicious! I added some sun-dried tomatoes, substituted white wine for half of the chicken broth and left out the carrots cause hubby doesn't like them. I also used canned cooked chicken because that was all I had. Easy, tasty and healthy! We'll have this again.

Blackend Baked TilapiaDelicious! 1 tsp of red pepper was plenty for us, though. I baked it for 15 minutes at 350-perfect!
|
|
Pork Chops In Sour Cream SauceMelt-in-your-mouth tender and delicious! I added some thinly sliced garlic with the onions and used veg broth instead of water. One complaint: the sauce was too thin. Tried adding some Parmesan, then some cream...no luck. Maybe drain some of the liquid before adding the sour cream? I wanted to try cream cheese, but DH was afraid it would change the flavor, which was perfect. We'll definitely have this again!

Italian-Seasoned Breaded VegetablesYep, browning the panko first was the key-ungreased cookie sheet for 5 min or til golden. We added red pepper strips this time...wow! Soooo good!

|
Chicken In Creamy Pan SauceVery rich! We would have liked more sauce, and the breasts took much longer than 4 minutes per side to cook through...but they were super-tender and my husband loved the flavor.

|
Leek and Potato HashI used peppered bacon (6 pieces instead of 3) which gave it some spice and heat. My husband loved it!

|
Italian-Seasoned Breaded VegetablesQuick, easy and delicious! We used panko instead of breadcrumbs which made it nice and crunchy, but it didn't brown the way I wanted it to. Next time I'll brown the panko first. This will definitely be something we use often!
