My husband and I live in the outskirts of Chicago and like everything about it except the winters. They are way to cold and snowy for me. (I think I was made to live by a beach in the tropics somewhere) I relax by sitting, wrapped in a blanket in winter or in my flower garden on the deck in summer, reading a book or cookbook and sipping chai (hot or iced).
I enjoy making new recipes quite often for my family and friends. They can often be heard asking "Mom, do you remember the dinner that had this or that in it from a few weeks ago? Can you make that again?" Well with this menu planner I will now be able to look back and see what I made and make it again.Thanks a lot. I am also looking forward to all the new recipes available to try.
My husband and I are just entering that empty nest stage as well as grandparent stage. We hope to enjoy more "date" nights, as well as traveling the world.

Marinated Oven-Fried ChickenI have made this chicken a number of times and it always comes out moist and very flavorful. We llike it with the cayenne pepper added for that extra kick. It goes well with homemade mac and cheese.

Tropical Fruit SaladI had a surprise birthday party for my husband and had a beach/tropical theme. This salad was a hit. The combinations of tropical fruits had a wonderful flavor and was different then the normal fruit salads I always had served. If I can find the fruit in season I will make this fruit salad more often.

Sweet, Sticky and Spicy ChickenThe sauce thickened and stuck to the chicken nicely but had no extra sauce for gravy so added 1/2 cup chicken broth. Can increase/reduce hot sauce to your spicy desires. [I posted this recipe.]

Dried Beef and ChickenCan use Corned Beef, might need to rinse the saltiness off the slices. Not alot of extra sauce - Double the sauce to make gravy for Rice or Noodles. Can add semi cooked bacon, mushrooms and cheddar cheese to the layering. [I posted this recipe.]

Simple Pizza SauceThis sauce has more flavor then the other sauce recipe I had been using. We all thought the homemade pizza had more flavor then any store bought. The prep for this sauce was very quick, I let it simmer for a good hour. I will be using this recipe for future pizza nights. Thanks.

Momma's Marinara SauceI made this sauce for Parmesan Crusted Chicken last night. Wow, what a great smell filled my house. The flavor was wonderful. My husband told me to stop buying those jar sauces and start making this one everytime we have pasta. Thanks for a easy flavorful sauce!

Parmesan Crusted ChickenI made this wonderful recipe for my husband last night. Wow, we both loved the moist chicken but crunchy outside. I have tried a lot of Chicken Parmesan recipes but this one is far superior. Most of the other recipes the breading came out soft and the parmesan flavor was lacking. I paired this with anglehair pasta and marinara sauce. With a caesar salad and crusty bread on the side. I will be making this again.
