Hungarian Mushroom Soup

Hungarian Mushroom Soup

This was great but a bit hot. I really want a slight smokey flavor and will use a mix if sweet, hot, and smoked paprika next time. I used mini portobello mushrooms that added a great texture.

Greek Style Moussaka

Greek Style Moussaka

This was excellent. For some reason I had way too much of the ricotta and egg layer and only half would fit in the glass 9X13 pan I was using.

Spinach and Smoked Salmon Fettucine

Spinach and Smoked Salmon Fettucine

I love this with the goat cheese but cannot eat goat cheese right now so I swapped it for cream cheese and added some tabasco. I think that I'll also add some tomato paste or sun dried tomatoes if I substitute cream cheese again.

Crockpot Beef Stroganoff

Crockpot Beef Stroganoff

Great taste! I added a can of mushrooms but will add two or fresh next time. I might try golden mushroom instead of cream of mushroom next time.

Slow Cooker Buffalo Chicken Sandwiches (Crockpot)

Slow Cooker Buffalo Chicken Sandwiches (Crockpot)

I didn't have a ranch dressing packet so I substituted Johnny's Garlic Spread & Seasoning. Also the sauce ended up being very watery and I omitted the butter and thickened with corn starch. It tasted fantastic.

I've been adding margarita mix in place of the water in the flour mixture. Absolutely love it!

Mocha Cinnamon Chocolate Chip Cookies

Mocha Cinnamon Chocolate Chip Cookies

I just tried this with instant coffee and they do not have quite the same rich coffee flavor. I'm going to try using the Starbucks Via next time as I can get this cheaper than espresso powder. I'm a bit perplexed by the person who said it was too dry. The only thing I can think of is that they didn't sift the flour and thus added too much. I wouldn't add milk in the future but rather more butter. It is the chemistry of the butter and sugars that give these cookies their beautiful lacy edges. The addition of a liquid will dissolve the sugars and change the texture.

Borscht

Borscht

So yummy! I was suspicious that the spice was too little, but I followed the recipe anyway. It doesn't need a thing.

Hungarian Goulash 2

Hungarian Goulash 2

I did a few changes and it tasted great. 1) Added Garlic 2) Tossed flour with the stew meat before browning 3) Mixed Spanish smoked paprika, sweet hungarian paprika, and hot hungarian paprika to taste 4) added whole bay leaves 5) added big chuncks of potatoes and cooked thoroughly (replace noodles)

Coleslaw with Green Apples

Coleslaw with Green Apples

I used this recipe as a guide as I didn't have all the ingredients. I used cabbage, apple and carrot with the sauce made of yogurt, apple cider vinegar, dijon mustard, agave nectar and salt & pepper. It was excellent!

Pho (Vietnamese Beef Noodle Soup)

I love this. I cook a roast to medium and thinly slice the left overs for pho on another night. It makes this super fast to put together.

This was excellent. I love the slight kick of cayenne. 1/8th of salt was perfect.

Spicy Chicken Tortilla Soup

Spicy Chicken Tortilla Soup

After I started cooking I found that I was out of stewed tomatoes. I used half the stewed amount of tomato sauce and it worked great. Also I added lemon juice to give it a kick of flavor.

Salads-fattoush

Salads-fattoush

I love that you sprinkle the sumac on the pita. I cannot get enough of the stuff. The only thing that I do differently is that I use 4 chopped green onions in place of the red onions. This is my favorite summer dish!
