Crock Pot Chicken DinnerMade this with some variations - I put a whole onion inside the chicken (stolen from slower cooker rotisserie style chicken found on bigoven) to help keep it moist and add flavor. also seasoned veggies with garlic powder, salt, pepper. seasoned the chicken with garlic powder, rosemary and pepper. turned out great.

Chicken Tortilla SoupWent over great and was easy to throw together. I added frozen corn to the pot and served it over a mound of brown rice.

Mexican Pork ChopsPretty tasty! And easy to throw together on a busy night! I added a can of pinto beans and seasoned the pork chops with chili powder before browning. Would also be great to add corn and black beans, as it seems to be a fairly versatile recipe. The taco seasoning was a bit much and not enough rice.

Stuffed Pepper SoupNice taste, although it wasn't very soupy. I added a couple cups of water to make it work. Topped with cheese and it was very good.

Pork Chops (tender, Oven-baked)Delicious pork chops! Dredged in flour only, no egg, and they turned out great. Added some mushrooms to the pan and used the drippings as gravy.

Crockpot Beef StroganoffThis was quick and easy to put together, but was a little too salty for our taste. Will try all low sodium next time. Also added mushrooms and served with noodles. Great leftovers!

Baked ZitiWould have more flavor if made with sausage (or half sausage/half beef) as well as some herbs. It's a good starting point but needs some work to keep in our rotation.

Favorite Slow Cooker Italian Beef SandwichesI thought it was great, but my husband thought the spices were a bit much. It's hard to be disappointed-I get all the leftovers to myself! Served on onion rolls, broiled to toast buns and melt the cheese.

Taco Seasoning MixTurned out great and tasted much better than store bought mix. As I try to reduce the amount of sodium in my cooking, this recipe made it super easy without sacrificing taste.

Slow Cooker "Rotisserie" style ChickenThis chicken turned out so tender it fell off the bone! Seasoned with salt, pepper and garlic and put a few bay leaves under the skin. The broth tasted so wonderful I was able to use it for gravy without having to add extra seasoning. Will make it again...and again!

Mexican Stuffed TomatoesMy husband loved them. They are a great alternative to tacos, which can get a bit repetitive. Easy to make and didn't take too much time at all. Served with pinto beans, Spanish rice and black bean/salsa tortilla chips.

Creamy Chicken PenneThis was a pretty good and easy to make dish. I cooked the peppers and garlic with the chicken to add flavor to the meat. Also added pepper and extra parmesan to the sauce.

Tasty Crock Pot Bbq Country Style Pork RibsQuick to throw together and it tasted great! Served with brown rice and fresh corn. I made 3 pounds of ribs and took about 4 hours in the crock pot. The meat just fell apart; so good!
