Chuletas Contentas (Happy Pork Chops)

Chuletas Contentas (Happy Pork Chops)

The rice was scrumptious but the pork chops were chewy. Not really a fan of steamed chops. I pan fried a pork chop separately for a picky eater and was told that pork chop was melt-in-your-mouth tender. The rest were not. Next time I'd pan fry the chops and add them to the pan for just a few minutes after they were completely cooked.

Beef a la Will Moreland

Beef a la Will Moreland

What did I like about this? The unique flavors! I would never have thought of putting coconut milk on a beef tenderloin roast, let alone to have put garlic, coriander, ginger and onions in the mix as well. The flavors were fantastic. I found the baking time to be too short even for very rare. We cut slices off the end and put the roast back into the oven to continue cooking while we ate the first pieces. We only finished about half the roast, which is still quite rare, so it will be even better tomorrow when we finish baking it and have repeats! I can't wait.

BBQ Bananas

BBQ Bananas

I made these just like the recipe directed and they were fabulous! When I told guests we were having BBQ Bananas, I got a lot of raised eyebrows. Everyone who likes bananas sampled them, and everyone raved about them! They were an enormous hit with kids! The touch of cinnamon made them gourmet!

Good, quick, easy. Not world class cuisine but quite satisfying just the same.

Saltimbocca Chicken Breasts with Sage Sauce and Creamy Arugula Pasta

Saltimbocca Chicken Breasts with Sage Sauce and Creamy Arugula Pasta

This was absolutely fantastic, and one thing I really loved was the simplicity of the pasta. Very flavorful. I've made it several times now - definitely a keeper recipe.

Pan-Seared Filet Mignon (Beef Tenderloin) with Shiraz Sauce

Pan-Seared Filet Mignon (Beef Tenderloin) with Shiraz Sauce

This ranks up there as one of the best meals I've had in my life! The sauce was fantastic, the meat so tender and juicy! I used thick ribeye steaks instead of filets. The cooking time is very short, so I prepped all my ingredients ahead of time so I could grab and pour. It worked beautifully.

Saltimbocca Chicken Breasts with Sage Sauce and Creamy Arugula Pasta

Saltimbocca Chicken Breasts with Sage Sauce and Creamy Arugula Pasta

Oh my gosh, this was SO good! It's a "busy" recipe ... you're doing something the whole time, usually with a chopping board and a saucepan and a bowl in which you're whisking and a skillet ... whew, that's a lot at one time ... but it's SO worth it! Careful once you put the butter in the sauce. It really will separate out quickly if it's too hot.
