Caramelized Butternut SquashAwesome, my husband lived it. I used olive oil instead of butter and only took 35 minutes roasting on 400, otherwise it would've been too mushy

Spinach Salad with Hot Bacon DressingI didn't have the shallots on hand, wish I had. I'd give this a try again but with less cider vinegar, it made it to sour and tart.
