This soup is good way to combine ingredients that are almost always in the kitchen in a unique offering. It makes a great first course garnished with a fresh sprig of dill and a dusting of smoked paprika. After making it this first time, I would only offer only one recommendation: when preparing the soup, you may want to cut your salt to just 1tsp. It will definitely be on the menu again.

A perfect way to prepare one of the most delicious cuts of beef. A little bit of prep work and then just let this cooking method do the work while you get back to entertaining your guests. I did make one slight modification: I reduced the second cooking time and switched from roasting to the top only (broil) heat source for the last few (three) minutes. This lent a delicious crispiness to the skin of the roast while maintaining a perfect medium rare doneness to the meat. If you do choose to modify the method, make sure you keep an close eye on the roast; you could go from fabulous to flambe in no time.
