Easy Breakfast PotatoesI love these. I have also done them with garlic and rosemary or with McCormick's BBQ seasoning. I've also put them in a disposable tin on the grill for BBQ's!

Squirrel's Dorito Taco SaladI love this. The only changes I make are warm Kidney Beans instead of the chili and I also make some guacamole to go with it.

Chicken TetrazziniI use this same recipe, but add some diced onion, diced red and green pepper sauteed in butter until tender, then when mixing together, add 1/2 bag of thawed petite mixed veggies (peas, carrots, corn, beans). This adds a lot of color and gives me the veggies as well.

Country Baked Potato SoupI made this tonight. Fantastic. I also added some simmered diced celery, onion and carrots. Reduced the white pepper just a tad. But I would definitely make this again.

P. F. Chang's Chicken Lettuce WrapsOK - I just made this for my hubby and I for Superbowl lunch pre-game. We both loved it! I would definitely make it again. Tasted just like PF Changs. I am adding to my favorites! I did fillet the chicken breasts in half before I cooked them, which made it easier to dice into smaller pieces, which worked very well. ____________________ Sounds like I should make this for Superbowl Sunday! I love them at PF Changs!
