Tex-mex Chicken Spaghetti Casserole
When I first found BigOven the main thing I was looking for was to find new recipes to try, and to spend more time cooking in, instead of eating out.
Unfortunately, since finding BigOven I have found out that I have cancer, now my interests include finding recipes that I can tolerate well, easy on the throat, etc.. while going through treatments and hopefully some tips or tricks from cancer survivors or caregivers.
Currently I am between treatments and am feeling really good, appetite has been great. I have been in a cooking and cleaning frenzy as of late. My fate is out of my hands, to worry about things one can't control is a waste of energy, my faith is strong. I am getting to enjoy the little things in life. There are so many blessings in life.

Buttermilk CornbreadI posted this recipe. The history of this recipe that I know of is that it was given to my aunt at the Foard County Hospital in Crowell, Texas many years ago. The lady that gave her the recipe was named Lavenia and her cornbread was very popular the with the patients and staff. I find the recipe, to me, has the best blend of flavor and texture for my tastes.

Tex-mex Chicken Spaghetti CasseroleI have made this recipe a few times no, always tasty. I tried substituting a rotisserie chicken from my grocer's for the chicken breast, it turned out quite well. Definitely a favorite.

Anaheim Chile Relleno Casserole with Red SauceMy grocer was out of Anaheim peppers so I substituted Poblano peppers. Tasted great. The sauce was a good choice, would've never thought of the cinnamon but that really completes the sauce.

BLACKBERRY COBBLERI don't think you can make a cobbler any easier than this recipe, then you figure how good it tastes. It's a definite win/win. I fixed it with fresh berries with some ice cream to top it off.
