Cajun "chicken" AlfredoThis was great! One suggestion, spray the cutlets with a little cooking spray just before dredging in blackening seasoning. It will help the seasoning adhere to the "chicken."

Smoky Black Bean EnchiladasVery good! Next time I make it I'm going to increase the amount of sauce and I'm thinking of using two cans of beans and one can of whole kernel corn instead of all beans.
