I love to eat and I love to cook! I'm a recipe follower, and although I'll tweak them to meet my needs I don't usually cook a big meal without a recipe to follow. I love all foods, all cuisines with only one exception - NO BELL PEPPERS! :)

Tipsy Mexican BeansAwesome bean dip. We used pinto beans, and didn't bother to measure anything and it was delish! It firms up as it cools, so unless you serve it hot, add a bit more liquid.Make up to 4 days in advance. Reheat bean mixture slowly in saucepan, add several tablespoons of water until creamy.

Rum-glazed Shrimp and MangoVery simple tasty although may make extra glaze next time to brush on right at the end. You could taste the glaze, but I would have liked more! Served it with a salad as a healthy dinner.

Mixed Berry Salad with MintMade this yesterday. Quick and easy, I made it in advance and kept refrigrerated until after dinner. We had it with a dollop of whipped cream for dessert. Very tasty! Didn't have the mint but really didn't miss it, will try it next time. May even use less sugar next time as the liquor really had a nice flavor.

Tandoori Chicken KebabsTIP: I love this recipe. The yogurt makes the chicken so tender (I leave it in the fridge overnight). And the blend of spices are also very flavorful. This is a very easy recipe to prepare the night before and then grill before dinner. Throw some fresh veggies on the grill, and you've got a great meal. [I posted this recipe.]
