Creamy Chicken Penne

Creamy Chicken Penne

Loved it! Used leftover turkey instead of the chicken, so it took even less time to prepare. So good it only served 3 though!

Cream Cheese Potato Soup

Cream Cheese Potato Soup "inspired by Panera's"

Easy, delicious! If you dice the potatoes they will cook in 20 minutes. I turned off the heat and melted the cream cheese with just with the heat of the soup itself. If you make this with red potatoes, leave the skins on. The added color is good and it is even faster to make.

Radish Slaw

Radish Slaw

Good except for the fact that it is dry! I doubled the lemon juice and oil and it was still dry. I then added 2 Tbsp of Marie's coleslaw dressing and then it was very good!

Fresh Turnip, Mustard, or Collard Greens

Don't try making this in the slow cooker because it took 4 hrs on high. Other recipes at different sites are better.

Oven-Fried Okra

Oven-Fried Okra

Impossible to have no calories. Cooked way too long for thawed okra. Any cornmeal left on pan will burn and smell up the kitchen. Fresh okra cooked half the time works better.

Chicken with Lime and Spices

Chicken with Lime and Spices

I had no marinade left and only used 2 chicken breasts, but it was very tasty and easy to make. Quick night entree because you have to let it marinate the night before.

Vern's Southern Style Spaghetti and Meatballs

Vern's Southern Style Spaghetti and Meatballs

Made only the sauce. It' s easy and delicious, but I did have to add more water as it suggested or it would have burned up in the first hour.
