What's for dinner?
Beef Stroganoff in Crock Pot
I'm a stay at home mommy. I love healthy eating and fitness, my boyfriend is a junk food aholic so my goal is to get healthy creative dishes to sneak in veges and whole grains into him!   I love cooking for my family! I'm hoping with this site I can find some quick and easy meals so not every dinner has to be a crock pot dinner! (Even though nobody is complaining)

I enjoy making dinners in my crock pot. I have an 8month old, and this way I can throw everything in and forget about it! Hes learned he sits in his high chair in the morning and watches mommy set it and forget it (I like to cook everything on low).  I also like baking, I'm not too fond of sweets but I love waking the family up on Sunday morning with fresh baked cinnamon rolls or banana bread and a quiche or casserole! Big fan of Sunday Breakfast and Sunday Dinner. Sunday is family day!

Chicken Enchiladas with a twist

It was an easy dish, I made mine in the morning and stored in the fridge till dinner time for baking. I used less water, didnt add any salt, and used much less cheese. Even after all that, I still felt so unhealthy after this meal. It was ok, but I wont make it again.

Easy Pineapple Chicken

Easy Pineapple Chicken

Delicious!! Everybody in my family loved this. Ive never made any asian chicken before and it was so simple. I followed directions exactly except I used fresh pineapple mixed with the canned, and I used hot sauce instead of vinegar because I had none(it adds no heat, so my non spicy family members still enjoyed). I served it over rice I had cooked with soy sauce. Very easy!!

3 Envelope Roast

3 Envelope Roast

This came out great! I added some carrots and potatoes that I had left over from a recipe the night before. I browned my meat with a little butter and cooking wine before putting it into the crock pot. Served with rice and it was great, will make again
