I love cooking and experimenting with new recipes and food ideas. My family and I are part of the "full-timer's" RV population, and are currently "docked" near Ft. Irwin, CA.  My kitchen may be small, but it doesn't stop me from finding new ways to prepare great meals. I am challanged to find healthy new recipes friendly to my environment, but consistently find new ways to prepare some of the tried and true favorites my family loves. I love to travel and be outdoors hiking, climbing and geocaching. We also spend a great deal of time on our Harley or exploring the 4x4 trails in the local area.  What a journey, and what an adventure!

I was skeptical of using cauliflower in place of potatoes, but it actually tasted really good! Even the kids smiled in amazement. Definitely an easy go-to for the summer months. **I didn't have frozen cauliflower on hand, so I used fresh instead.

Amazing! I skipped out on the Scotch Bonnet chiles and used some crushed red pepper instead since my son is a little "sensitive" to spicy foods. ;) Worked out very well. Fabulous flavor!

Grilled Lemon Lime Chicken over Angel Hair

Made this the other night and everyone really enjoyed it. Was an easy marinade to make up, and I actually reserved about 1/2 cup of it for use over the top of this dish rather than a marinade. I marinated in a ziplock back, so it worked out perfectly and left just enough for the meat in the bag. Prepared with fresh broccoli and gave a wonderfully light flavor to the meal.

So in my browsing I was thrilled to find just a quick "backpack checklist" for the sport. This works great for a day trip with the kids when you have more helping hands in packing than is sometimes preferred. ;)

I loved the idea of a different chicken recipe, but I just don't think the "citrus" is it for me. It was ok, but seemed very sweet to me in a way that I couldn't come to expect from my dinner. Great easy recipe. Put this together and then went out hiking with the kids for the afternoon. It was so easy to just boil some pasta quick when we got back, and it was just the energy kick everyone needed. I did add some fresh parsley at the end and served it with some leftover salad. I also cut butter down to a tablespoon and a tablespoon of olive oil. Agree with "Stewdebaker" that a little white wine would be a great addition to it but haven't tried it yet.
