My husband said it was as good as the Mongolian Beef he has at some of his favorite Chinese restaurants. High praise indeed. I realized I the soy sauce bottle was almost empty while I was cooking so I used half soy sauce and half rice wine vinegar and tripled the ginger. Zippy Pineapple Baked Chicken Breasts

Just made and ate this for lunch. Husband loved them. When baking, I put them in the oven for 20 minutes, poured the glaze on the chicken breasts and then baked for another 20 minutes and they were perfect. Also, I did add a little cornstarch to the glaze as suggested.

Big kudos for this one. I thought I had the Ritz crackers at home, but a mysterious someone ate them as a snack. So I used breadcrumbs and everyone was happy. Will hide Ritz crackers and use them next time. Terrifc stuff !

My family enjoyed this recipe. It's delicious and full of flavor. I used nonfat Greek Yogurt instead of the sour cream and it really lowers the calorie count. Also, next time I will use a bigger baking dish so there will be fewer drips in the oven.
