Indian Rice Pudding
Book reviewer, jewelry maker, T-shirt designer... I'm eternally learning new things and can't seem to sit still! Happily married with two adorable cats. One of my favorite parts of all this is reviewing cookbooks!
I'm always trying and loving new things, but I have a few odd quirks (hate onions!).

Anytime Granola BarsDelicious, although I prefer to crumble it up and have it as cereal. It goes so beautifully with milk. If you can, get almond honey (not almond flavored)---it works perfectly with the granola flavors. When I made these they were a bit dry and crumbly, but it's normal to have to adjust liquid for current humidity; next time I'll just use a little more oil. Recipe neglects to say how much salt to use; I tried 3/4 t, and will try 1/2 t in the next batch (3/4 t was borderline too much).

Fried Almonds And Manchego CroquetasFantastic! I've never been able to make decent fried cheese before, but the combination of Manchego's texture and this recipe's coating worked perfectly. Be sure to eat immediately, before it starts hardening up again. I've since made the almonds separately on more than one occasion as well---such a simple application, but delicious!

Crunchy Drop BiscuitsScrumptious! Very flavorful, and love the mild crunchiness. Extremely easy to make, and doesn't require ingredients I'm not likely to have on hand every week.

Fluffy PancakesAbsolutely fantastic! Fluffy, sweet, easy, tasty, and doesn't require running out for buttermilk at the last minute if I don't have any around the house.

Spinach and Lentil SoupDelicious! Surprisingly flavorful and easy. I made two substitutions since I was working from what was in the house, and it came out beautifully: I used split peas (with appropriate alterations to soaking/cooking) instead of lentils, and a can of tomato sauce instead of the tomato paste. Otherwise I followed as directed, and the results are fantastic!

Honey Dijon Roasted BeetsDelicious! I was surprised at how well the mustard complemented the flavor of the beets.

Indian Rice PuddingDelicious! Subtle and not too sweet, very simple and quick. Also works with Arborio rice. I prefer to add the raisins at the same time as the sugar to plump them as much as possible. Fantastic way to use up leftover rice and extra coconut milk. Note added later: I made a version of this yesterday without raisins or pistachios, but with fresh blueberries added at serving time. I liked it that way even better, although obviously it's far from traditional!
