Make sure the ends of the pickles are really clean. Any bit of the stem or blossom can spoil the batch.
Stuffing a zip lock bag in the top and filling with remaining brine or water is another method for covering pickles during fermentation. If there is never enough brine covering the pickles, add more salt water solution in the same salt to water proportions. [I posted this recipe.]
