Banana BreadI made this the other day and it's amazing! It's so moist and delicious! I made them as large muffins for breakfast and baked for about 30-35 minutes and came out great! Definatly a keeper!

Potato Kielbasa SkilletI made this tonight for dinner and everyone loved it! I may make more "sauce" next time though and make sure to cut the potatoes all the same size (maybe cook them longer in the microwave also) to make sure they cook evenly

Eggplant Parmesan LasagnaI made this tonight and it was AMAZING! A little time consuming, but totally worth it! My dad, the carnivore in the house, even has 2 servings. I left the skins on the eggplant instead of peeling it, which saves on time and was still good :). Can't wait to make this again soon!

Fiesta Chicken CasseroleI made this tonight and LOVED it! O decided the next time I make it I can use it as a dip for tortilla chips, or instead of using the pie crust use crushed tortilla chips (the crust was hard to remove) I may reduce the liquids in half and add a bit mor chicken so it is not ad runny, bbut still loved it!
