Vodka Sauce

Vodka Sauce

This sauce freezes and then nukes very well - I usually make a double batch and freeze the extra for quick meals. [I posted this recipe.]

Italian Pasta Stir-fry

Italian Pasta Stir-fry

I added a handful of brown mushrooms to the pan just after the zucchini. Fresh grated Parmesan is the best to use in this. [I posted this recipe.]

Peanut Miso Dressing And Dipping Sauce

Peanut Miso Dressing And Dipping Sauce

This is very similar to the salad dressing used at our favorite Japanese restaurant. I used red miso as we prefer a saltier taste.

Quick and easy, but tastes like a special dish.

French Onion Soup

French Onion Soup

I would have given this a five, but the directions appear to be mostly missing - when / how do you add the pepper, paprika etc.? I had to wing it and it came out OK.

Baked Penne with Double Mushroom Sauce

Baked Penne with Double Mushroom Sauce

Can be assembled ahead of time - store sealed casserole dish in refrigerator overnight. Note: strong wine or vermouth taste - will probably reduce vermouth amount to 1/2 or 3/4 cup the next time. [I posted this recipe.]

Basic Guacamole

Basic Guacamole

Mad this for the first time in a while last weekend and was struck by how delicious and easy it is. Great on chips as a dip but also terrific in a salad.

Basic Guacamole

Basic Guacamole

This can be made several hours ahead and refrigerated. The taste and texture are best, however, when freshly made. [I posted this recipe.]

Granny's Granola

Granny's Granola

Add raisins or other dried fruit for additional taste and nutrition. [I posted this recipe.]

Light and Lemony Broiled Scallops

Light and Lemony Broiled Scallops

Will probably add a little more teriyaki sauce or possibly soy sauce the next time. My girlfriend (the scallop junkie in the family) loved 'em.

Oven Baked French Toast

Oven Baked French Toast

Tried it this morning. Tasted great and was easy to make. Next time, I'll probably add cinnamon and a dash of nutmeg to the egg mixture, rather than sprinkling the cinnamon on top - we're cinnamon junkies.

Beef and Garlic Rice

Beef and Garlic Rice

1.) If desired, substitute 1 to 2 tablespoons bottled roasted minced garlic for the garlic bulb and olive oil. Add bottled garlic to rice along with the chives. 2.) Any leftover roasted garlic can be wrapped and refrigerated for a few days and used as a spread on toasted French bread slices, added to mashed potatoes or a salad dressing, or tossed with roasted vegetables.
