Retirement...ah...the good life, the busy life. Living in paradise means lots of company, especially in the summer. So, now that cooking is an option not an obligation I'm finding it has become a much more enjoyable task. Sharing cooking duties with my sweet hubby makes it even better! The web means so many more options and never not haveing a recipe for whatever.
Renting out the farmhome next door and our family cottage on the Lake Michigan beach below keep me semi-gainfully occupied and out of trouble. Photography , grown children, grandchildren, reading and the computer keep me from ever being bored.

Cooking for two just isn't as much fun as cooking for an appreciative group, especially a group that has no regard for calories. After spending 20+ years associated with Boy Scouts and having sons, comfort food seems to be a speciality. I have yet to make friends with vegatables, if someone else cooks them I do like them, just have a 'thing' about cooking them.

Crab Cakes with RemouladeThese will go into the 'Please do serve again' category. I followed the recipe, other than using imitation crab. Not living near the coast this worked well. Would love to try this with real crab! We also used the 'Simple Remoulade Sauce' from Big Oven, a hit certainly.

The Best Beef StroganoffGoing into my 'repeat' file. This turned out wonderfully done with venison roast (sliced...) in the crock pot. The house smelled incredible when we walked in, added mushrooms while the noodles cooked, then the sour cream last minute. Oh yes!

Garlic - Parmesan Crusted Pork ChopsYummy and moist, a repeater certainly. Following the browning, then baking (suggested by another reviewer) worked wonderfully. Only used enough oil to cover the bottom of the pan.

Sweet-spicy Pineapple SaladThe dressing was fun, the pineapple and onion worked, but all together it just didn't work for us.

20-Minute Chicken ParmesanThis was certainly a wonderfully easy dinner! It WILL be repeated at my husbands insistence.

Smoky Sausage JambalayaOn our repeat list. Think next time I'll add some shrimp, truly was very nice and easy. Found a nice recipe for Cajun spice mix on another site.

Baked FishThis was VERY easy and came out quite well. I used flounder fillets and overlapped the thin parts. Maybe next time will sprinkle with bread crumbs to satisfy my carb cravings.

Sheryl's Mongolian BeefOh yes! This received rave reviews from my hubby who is the Mongolian Beef 'expert'. A bit fussy the first time through but now that I know the how's and whys it will be easy. Venison steak works wonderfully BTW.

Creamy Chicken EnchiladasBig time comfort food. Actually pretty easy to make, and yes, it will get repeated. Think I'll kick up the spiciness some next time, loads of good suggestions in the reviews.

Old Fashioned Pot Roast In A Crock PotYum, altered a bit by cutting veggies up, used a whole package of Lipton and onions. The left-overs became stew by making gravy from the juices. My hubby wouldn't let me freeze it for another meal, tomorrow's lunch apparently.

Burrito BakeAn easy version of an old family favorite, the secret is the sauce which is wonderful over anything burrito related. The left overs are labeled and fought over so don't hesitate to double. Serve with sour cream.
