Yummy, yummy!! This was so good. I used a combination of skinless breast meat and skinless boneless thighs. I doubled the sauce ingredients and then reduced it until it was the consistency I liked. I also added a bit of Ponzu, citrus flavored soy sauce and a dash or two of Worchestshire Sauce. Will try it over brown and wild rice next time as my daughter overcooked the white rice we had it with. Would probably be good over couscous too!

Classic Bistro Potato Gratin Dauphinoise

We Went out for Valentines day to a fancy place that had potatoes dauphinoise as a side dish. They were so good, I decided to make. I search many recipes, including my handy, and very old copy of The Joy of Cooking, but this recipe seemed the closest to want we had. From the first waft of garlic, to the creamy, melt-in-your-mouth taste of the potatoes, it was perfect! I did make some minor adjustments. First, I brought the cream, salt, pepper & garlic to a low simmer, I order for the salt to combine and for the garlic to infuse into the cream. I sliced the potatoes on my mandolin then rinsed and dried the slices between layers of paper towels until all the water was gone. The rest of the recipe was the same for the most part. Everyone in my family loved it!!!!!

Used my family as guinea pigs to test this recipe out. I added an onion cut into slices to mirror the linguini. Everyone loved it!!!! My BF suggested I make more spicy on the next go round. That says success to me!!!!

Yummy, yummy, yummy!!! I didn't roll them up. Instead, I rolled the cheese and ham up and stuffed the roll into a breast that I had cut a pocket into and spread the tiniest amount of Dijon mustard into. Then I followed the rest of the recipe, dipping into the melted butter/olive oil followed by the panko breadcrumbs. 30-35 minutes in the oven at 350 and the chicken was cooked through and everyone in my family raved about it. Pleasing 4 picky teenagers isn't the easiest task, let me tell you!!!! I've made this again one evening after a very long 9 hour work day for my SO and I and it was fast and easy! Just absolutely delicious!!!!
