I am 33 years old, and I live in Nashville, Tennessee. I work in healthcare as a computer Help Desk Operator. I have a wonderful and supportive boyfriend of 2 years, and we just bought a house and moved in together in December 2010. I am trying to cook more often now, because we eat out way too much.

Baked Fish & ChipsI'll review again since I made these again recently. I sprinkled a mix of salt, pepper, onion powder and garlic on the potatoes, and they were delicious! So much so that I craved more the next day.

Cheesy Chili-MacThis recipe turned out to be more complicated than it's worth. I have a more simple way of making chili that would have been just as good, then add the macaroni. The recipe called for 2 onions, but I used 1/4 of one and had plenty. Also, I only used 2 tablespoons of green chiles for a milder version.

Judy's Lemon SquaresThese turned out to be very simple to make. I did make the mistake of not baking them long enough. They need to be slightly brown on top, otherwise they are too gooey. They tasted delicious!

Crockpot Potato SoupThe soup turned out good, though a little more bitter than I usually like. I added a seasoning mix that I have of salt, pepper, onion powder and garlic powder that helped. It also tastes best with bacon.

Baked Chicken And ZitiI only had 1 can of tomatoes, but this recipe still turned out well. I'll definitely try it again.

Texas Chicken SoupThis recipe turned out better than I expected, and super quick, too. I'll definitely be having this again on an evening when I am short on time for cooking.

Roasted Beet SaladI didn't like this recipe too much, but I think it was probably because of my dislike of uncooked onions. The rest of my family enjoyed it.

Baked Fish & ChipsThese turned out much easier than I expected, though the cook time was a bit longer. This makes for a good meal on a day where you have more time to prepare. I wouldn't have time to make this after work.

20-Minute Chicken ParmesanI've tried making chicken parmesan in the past with little success, however this recipe was a hit! It's easy, quick and delicious. I added whole wheat pasta to our plates and topped it with the chicken for a full meal.

Broccoli and Sausage CasseroleWhile I didn't follow the instructions completely and made a couple of substitutions, this recipe turned out delicious. I served this as a breakfast casserole, but it would be good for any meal of the day.

Seafood EnchiladaMy boyfriend claims that this is as close to the Cancun from ChiChi's. The secret truly is the lobster base, which we had to order online after searching several grocery stores in the area. This is going to be a regular in our house.

Weight Watchers SoupI made this soup in the slow cooker, and it turned out delicious! I added a can of diced tomatoes and used a 12 ounce can of Low Sodium V8, then added a few of my own choice spices. I'll definitely be making this again.

Chicken Enchiladas with a twistTastes great but is messy to assemble. I'm not adding as much broth to the mix next time, and I'll sprinkle the cheese over the mix before rolling up, instead of in in the mix.

Company Broccoli and Three Cheese BakeThis recipe would have been just as good without all of the added ingredients. I could have saved myself time, trouble, calories and money by warming up the broccoli & cheese bag alone.
