What's for dinner?
Butternut Squash Soup

Have always loved to cook and pride myself in almost never feeding my kids fast food. It was always a vacation treat and not a standard even at busy times. Kids are now grown and have followed my lead. My boys know how to cook and do. Besides cooking for fun I love water aerobics and reading. I no longer work so I enjoy my free time doing as I wish.

I enjoy eating seafood of ant kind, anytime! My husband enjoys anything I cook  but is  steak, baked potato and salad best. We eat a mix of a wide variety of foods as a compromise ! My fondest memories of cooking always involves my family which includes extended family. Thanksgiving remains the one time every year we gather and make up for the entire year. Both my brothers are excellent cooks also! The one meal I cooked with my Mom thart was unusual and a wonderful memory was an all out from scratch chinese dinner. I bought special dinner ware and had the table set when all walked through the door to lots of oohs and ahhs. The food was never ending and awesome. A night to never forget. unlike the duck we ALMOST forgot!

Parmesan Baked Cod

Parmesan Baked Cod

This is my second go around for this dish. It is easy, delicious, and inexpensive since I bought a lot of cod on sale and froze it. I am sure this will be a regular in my vast repertoire!

California Shrimp and Scallop Stir-Fry

California Shrimp and Scallop Stir-Fry

My husband is not a fan of Asian food but he raved over this and came back for seconds! I used sherry with the cornstarch and soy. We both enjoyed the flavor depth it gave the dish. Excellent! It stays in my " favorites" !
