Pork Chops & Potatoes
We live in Okinawa, Japan on Kadena Air Base.  We explore the island for adventure. I am a student at the New York Institute of Photography.  Love to Rockband with the kiddos, etc.  Or jam with the neighbors, go to the Cave, sing karaoke, or stay up til sunrise and just be my myself to stop and see life in a different light.  I'd love to dance and paint again, but I run out of time! Cooking is not a new hobby, however I'd like to find new foods that I'm good at making.

Made this dish again. My 9 year old devoured it and said it was "awesome"! Complimented me numerous times throughout the evening on how good the broccoli was, and then helped clean the table. Now that's what I call awesome! My husband, who despises broccoli in every form, suffered through the dish without complaint. That's saying something.

I enjoyed this recipe. Reminds me of something my mom used to make, except she used rice instead of potatoes. Mostly, I followed directions with a few changes. Added thinly sliced carrots with the onion and potato. The potatoes I used were frozen bagged red precooked that I thawed then sliced (fresh potatoes in Okinawa, Jp right now are over $14 for 4 potatoes.) Shortened the time to 35 min covered, 15 min with cheese. Could have shortened it 10 min more for a more tender meat.

A recipe I have made repeatedly and was based on my husbands grandmother's recipe. Best I have ever made by far. Using butter instead of oil gave a much more intense and healthy flavor, and the fresh garlic just made it outstanding. If in a pinch and you run out of ingredients, you can simply use oil, vermicelli, tomatoes or tomato sauce, and dry seasonings. The chorizo is just a bonus.

Tequila Lime Chicken

Tequila Lime Chicken

1 Star for moist chicken. However 1 Cup of lime juice is WAY too much. All we could taste was lime through the whole meal. Nobody finished a single piece of the chicken. People say everything like chicken, but this chicken tastes like lime. When making the marinade I had a feeling it was too much but followed the recipe anyway. I think it would be a great recipe if the lime was cut down to AT LEAST 1/2 cup = to the tequila. We make a tequila lime chicken using an old Applebee's recipe, and nothing compares to it. It also has only a few drops of lime to offset the tequila and spice.

Southwestern Hominy Casserole (Quick)

Delicious Flavor! I loved it. (The husband and kids did not appreciate this dish, but none are casserole fans) It was very creamy similar to potato salad. Soft in texture but extremely flavorful. Added an extra tsp or 2 of hot sauce. Next time I may use cornstarch instead of flour to thicken more. Serve with something crisp or crunchy to offset the softness. I think tortillas strips on top would do the job. 5 stars for flavor!

Very good. I made the mistake of not re-reading the instructions and left the grill open. A few pieces of fish fell apart and they stuck to the grill even after spraying with nonstick spray. Most likely because the wind was blowing and I had to let them cook too long due to the fact that the cover was open. But next time I will remember to do it right! They tasted wonderful nonetheless.

The chicken was juicy and that's why I rate it 2 stars. The apple cider vinegar was too much... very overwhelming. Nobody at the table enjoyed dinner tonight. However it could definitely be improved by adding a few things. Possibly garlic or chili pepper, etc... something to offset the taste of vinegar. The bbq sauce really didn't do much for the tang... but if you like super tangy chicken then this is for you:)

Cajun Blackened Tuna

It is a good recipe. The kids and I inhaled it. I will definitely grill the steaks next time. As I don't own a cast iron skillet yet, the tuna stuck to my teflon and the oven seems to dry out the fish (and I like mine cooked). The grill I hope will keep it moist and yet not rare. A bit much on the seasoning for my taste, it overwhelmed the natural taste of the fish, but this is an easy fix. I served it with butter and herb noodles, and sweet buttery baked carrots (to off set the spice), with biscuits. Rice would great side to this meal.

Tasty, sweet addition to spicy cajun meal! After cooking at 400 for 20 minutes the carrots still had a bit of crunch, but it was good overall. The butter/water mixture didn't steam and soak up the way I thought it should have. Next time I will use a my pampered chef microwave steamer and it work be better. It's a simple recipe and I didn't need to go shop for ingredients so yes I'd make it again. It barely fed 4 people...very small servings.
