What's for dinner?
I'm cooking for my 93-year-old mom and my handicapped husband. Their appetites are small but they like variety. I try for fruit and veggies at every meal, with a small amount of meat. They also love home made bread. My husband has trouble with small things like rice and peas if served without a sauce.

Pasta CarbonaraReally good. You should start the pasta first, though, or the completed sauce will have to sit around waiting. The ingredient list calls for pepper and Parmesan but the instructions don't mention them. I just added them as topping.

Green Bean Almond RiceWhile preparing this it seemed a bit dry, but that wasn't the case at all when served. We had baked Parmesan tilapia with this. Excellent!

Baked Parmesan FishExcellent! My family does not like fish - they only eat it to be polite - but they loved this. I made it just as written, and served it with green bneans almondine.
