I live in Florida, but I come from NY originally. I love to cook and my husband likes to eat. I try not to eat the same thing more than twice a year. I make extra to store in the freezer for a later meal. I love freezer cooking. I am a busy person with 6 children (4 left at home), I am going to school for my MBA. I work as an accountant at the moment. I love football and get togethers.

New York Rye Bread AbmI tried this last Sunday, look forward to a taste of home. When the ABM beeped I opened the lid and to the ABM and to my surprise you could add this to a wall and it would hold the whole thing up! It didn't rise. I thought... maybe my yeast is old so I went and got some more yeastm checked the expiration (next year) and set out to make this bread yet again. Guess what?? Same brick! Don't waste your time or money on this one!

Red Beans and RiceI doubled this to make a large batch being that it takes so long to make and I froze half for a later use. I added 2 cups of cooked rice to the beans when they were done. My husband and the kids raved about this so it was well worth the effort and the time it took to make. [I posted this recipe.]

Creole Seasoning (emeril) RecipeI made Red Beans and Rice and it called for Creole Seasoning. I didn't have any and I hated to have to go to the store to buy something that I would hardly ever use so this was a lifesaver!! [I posted this recipe.]

Empanaditas (Pork Turnovers)I had used leftover pork roast and I made these up, individually wrapped these to freeze for later use. I used every bit of the roast and the dough was surprizingly good. My husband really liked it and he has lunch for a later date. This is a great way to use all your leftover pork without wasting anything.

Pretzel BarkI had stale pretzels that my son had left the bag open to. When I made this with them, it was like the pretzels weren't stale. I didn't waste the pretzels and my son loved it so this was a win, win for me.

Italian Ricotta CheesecakeI cooked as directed with an exception. I greased the bottom of 2 round cake pans with Crisco and pressed in some gram cracker crumbs so it wouldn't stick since I do not have a spring form pan.
