Olive Garden Zuppa ToscanaThis is a very good recipe. Could not find italian sausage so I used andouille. This mod worked fine. I like it spicy so when I make it again I will double the red pepper.

Spicy 7 Bean SoupMade broth from Better Than Bouillon Ham and added a little too much which made it a little salty. Make sure you follow your broth instructions closely.

Lucys Salmon SoupI left out the dill, which neither my husband nor I care for. It was a great way to use some cans of stuff we needed to use. It did take a bit longer than expected because it took the potatoes a while to cook, so budget for that.

Southwest Cactus SaladJust excellent. The tangy lime cactus flavor and easy prep makes this a regular favorite. I would recommend saving time by chopping the veggies in a food processor. So quick and easy.

STRAWBERRY-RHUBARB FOOLIt was good. However, note that the recipe does not say what to do with the strawberries. I decided to cook the rhubarb and add the strawberries at the end after turning off the heat, refrigerating them together. This was based on other recipes I found. It worked fine.

Cajun FettuccineI would add more cajun seasoning to the sauce while cooking, and also sprinkle liberally on finished dish. Might also add salt if cajun/creole seasoning is salt free.

Heartland Fiesta Whole Wheat Organic SpaghettiThis had excellent flavor. My one comment is that you might want to experiment with using less pasta, or mixing pasta individually based on amount of sauce preferred. For us, it didn't quite have enough sauce. But it was still delicious, and a good way to sneak in some whole grains without giving up flavor. [I posted this recipe.]

Lentil Curry Soup (Ayurveda)I used pre-ground cumin and coriander, and I think it was way too much. The spices were incredibly overwhelming for the amount of lentils and potatoes, and I generally love spicy Indian food. I would make this again, but either increase the amount of lentils, potatoes and broth, or reduce the spices.

Chicken Tortilla SoupVery tasty, but also quite rich. I interpreted the "small container" of half and half as a pint, but next time I would use a cup instead. It was a little runny. I would also suggest using either very large chicken breasts or one additional breast.

Easy Vegetable SoupCan use "Better than Bouillion" and water instead of chicken broth - it still tastes great. [I posted this recipe.]

Hot and Sour SoupI couldn't find the mushrooms and fungus in the recipe, so I used wood ear and s---ake mushrooms, and it was delicious. 2 oz each of dry mushrooms seems excessive - maybe they meant 2 oz after soaking. Anyway, I used about .25 oz of each of the dry mushrooms and it was perfect. I also substituted red wine vinegar for the sherry/rice wine, and used about 2-3 tsp. of cayenne instead of the chili oil. I think it gives it a smoother flavor and makes it less oily. Finally, I would suggest choosing a leaner cut of pork than the Boston Butt.

Beef And Vegetable StewWe really didn't like the strong thyme and wine flavor. It helped when we added a whole bunch of salt, but we still didn't much care for it.
